We’re sharing another favourite from Mila’s Meals recipe book. Although this recipe book is aimed at kids, we love it for the whole family.
Ingredients
800ml coconut milk
2 Tbsp arrowroot powder
1/2 cup honey
2 tsp vanilla extract
4 Tbsp kefir (optional)
Method
– Place the coconut milk and arrowroot in a saucepan over medium heat and bring to boil while stirring continuously.
– Cook over medium heat for 2 minutes to thicken – it should resemble a thick syrup.
– Add honey and vanilla and stir until well combined.
– Transfer to a mixing bowl, cover and cool.
– Once cooled, transfer to an ice cream maker, add kefir, and follow the manufacturer’s instructions on how to use the ice cream maker.
– Serve immediately or freeze in a container.
